                               Simple Brisket

    4      pounds        fresh beef brisket (up to 5 lbs)
    1      1.5 oz pkt    dry onion soup mix
    1      4 oz can      mushrooms -- undrained
 
 Serves 8 to 10
 
 Trim all excess fat from brisket.  Combine onion soup mix with mushrooms and th
 eir liquid.  Place brisket in Crock-Pot with fat side up, cutting to fit if nec
 essary.  Spread onion soup mixture over top of brisket, moistening well.  cover
  and cook on Low for 10 to 14 hours.
 
 Remove brisket and cut across the grain into thin slices.  Serve with meat juic
 es poured over top of slices.
