       Title: MUSHROOM CRUST QUICHE

       Yield: 1 servings
  
     1/2 lb Fresh mushrooms,
            Coarsely chopped
       2 tb Butter
     1/2 c  Chopped green onions
       3    Eggs, slightly beaten
     1/4 ts Salt
     1/4 ts Cayenne pepper
     1/2 c  Fine dry bread crumbs
       1 c  Cottage cheese
       1 c  Shredded Monterey Jack
            Cheese
  
   Melt butter in skillet,add mushrooms and saute until
   golden,about 10 minutes.Stir in bread crumbs,then pat
   into a 9 pie pan or divide among eight 4 tart pans.
   Combine cheeses and remaining ingredients;spoon into
   prepared crust.Bake @ 350 degrees 35 to 45
   minutes,until puffy and golden. Cool about 10 minutes
   before serving.Makes one 9 pie.
