      title: parmesan tomato tart

       1 ea pie crust
      15 oz ricotta cheese
       3 ea egg
       2 t  fresh oregano
     3/4 t  salt
     1/2 t  fresh ground black pepper
       8 ea roma tomato
       1 c  parmesan cheese
       6 ea fresh oregano
 
 combine ricotta, eggs, oregano, salt, and pepper-mix well
 spread half of ricotta mixture over bottom of crust
 sprinkle with parmesan cheese
 arrange a layer with half of the sliced tomatoes
 sprinkle with parmesan cheese
 spread remaining ricotta mixture over tomatoes
 sprinkle with parmesan cheese
 arrange remaining tomatoes on top
 sprinkle with remaining parmesan cheese
 bake @ 350 degrees for 60 minutes, just until golden
 remove from oven and allow to cool 30 minutes, before cutting
 garnish with an oregano sprig
 serve warm or at room temperature
