                          Crustless Spinach Quiche

    2      Boxes         frozen -- chopped spinach
      1/2  Lb.           grated sharp Cheddar
    6                    eggs
    6      Tbsp.         flour
    1      Lb.           cottage cheese with chives
                         (or substitute ends of a bunch of green
                         onions
                         for chives -- chopped)
      1/2  Stick         butter -- chopped into chunks
 
 Use 2 quiche dishes, 2 pie plates or a big rectangular
 dish. Spray with Pam. Heat oven to 350 degrees. Thaw and drain
 spinach. Press extra liquid out of spinach. Grate Cheddar
 cheese in processor. Chop onions. When spinach is ready, mix
 flour and eggs in processor. Then add all other ingredients.
 Bake at 350 degrees for 50 to 60 minutes until set in middle and
 slightly brown at edge. (This takes only 30 minutes in 2 glass
 quiche dishes.)
