                               Tomato Quiche

    1                    pie shell -- 9 inch
                         Oil to saute
    2                    tomatoes -- skinned and sliced
    2      teaspoons     basil
      1/2  cup           milk
    1                    onion -- sliced
    1 1/2  cups          grated cheese
    2      tablespoons   flour
    3                    eggs -- beaten
                         Salt to taste
 
 Make pie shell by preferred recipe. Bake in preheated oven (400 degrees) for 8 
 minutes. Meanmwhile, saute onion in oil unitl soft - not brown. Put 1 cup of ch
 eese in bottom of pie shell. Top with onions. Sprinkle tomato slices with flour
  and basil and saute 1 minute on each side. Arrange atop onions. Combine eggs a
 nd milk and pour over tomatoes. Salt to taste. Sprinkle remaining 1/2 cup chees
 e on top. Bake for 10 minutes at 400 degrees, then 15-20 minutes at 350 degrees
