       Title: DEVILED EGGS A LA JADI
  Categories: Appetizers, Dips
       Yield: 18 servings
  
       9    Hard-boiled eggs -- peel            1 tb Sesame or peanut oil
            Shell                           1 1/2 ts Lemon juice
       3    Scallions -- finely chopped              Salt and freshly ground
      12 oz Cn tuna-drained and flaked               Black pepper
   1 1/2 ts Dry mustard                              Paprika
     3/4 c  Soy sauce                      
  
   Slice eggs in half, lengthwise. Remove hardened yolks to a mixing bowl.
 Add
   scallions, tuna, mustard, soy sauce, oil, lemon juice, and salt and
 pepper
   to taste. Mix well. Fill egg white halves with tuna/egg yolk mixture.
   Sprinkle tops with paprika. Note: Crab meat or abalone may be substituted
   for the tuna.
