       Title: Sicilian Meat Roll (Created for Roanoke Times Contest 199

       Yield: 6 Servings
  
       2    Beaten eggs
     3/4 c  Soft bread crumbs
     1/2 c  Tomato juice
       2 tb Parsley
     1/2 ts Oregano
     1/4 ts Salt
     1/4 ts Pepper
       2    Clove garlic, minced
       2 lb Lean ground beef
       8 sl Boiled ham (thin)
       6 oz Shredded mozzarella
       3 sl Mozzarella, halved
  
   Combine eggs, bread crumbs, tomato juice, parsley, oregano, salt, pepper &
   garlic.  Stir in ground beef, mixing well.  On foil, pat meat to a 12x10
   rectangle.  Arrange ham slices on meat, leaving a small margin around
   edges.  Sprinkle shredded cheese over ham. Starting from the short end,
   carefully roll up meat, using foil to lift. Seal edges and ends. Place
   roll, seam side down, in 13x9x2 pan. Bake in 350~ oven for 1 hour and 15
   minutes.  Put cheese wedges over the top of the roll. Return to the oven
   for 5 minutes or until the cheese melts.
