                        Mom’s Southern Fried Chicken

                         chicken pieces
                         flour
                         seasoned salt, salt and pepper
                         oil or shortening
 
 Dredge rinsed chicken pieces in flour mixed with seasonings. Place in hot
 fat in lg. skillet (s). Do not crowd.
 Cover and cook over Low heat for 15-20 minutes. Uncover and turn
 temperature up to Medium-High. Fry and turn and crisp and brown. Remove to
 paper towel lined platter. Salt lighty.
