                              Rainbow Stir-Fry

    1      pound         Scallops, crabmeat
    2                    Red bell peppers
   10      milliliters   Garlic -- minced
    2      bn            Watercress OR
    1      pound         Fresh spinach
    2      tablespoons   Vegetable or olive oil
    1      tablespoon    Lemon juice
                         Salt
      1/8  teaspoon      Dried red pepper flakes
 
 Prepare seafood and vegetables.  Heat oil in large skillet over medium heat.  Add
peppers, reduce the heat, and cook until somewhat tender, 3-4 minutes. Add
garlic, seafood and lemon juice to the peppers and saute over medium heat,
stirring on occasion, just until seafood is cooked through, about 5 minutes. Add
watercress or spinach and saute until wilted. Season to taste with salt and red
pepper, and serve immediately.
