                                 Crab Cakes

    2                    eggs
    3      tablespoons   mayonnaise
    1      tablespoon    Dijon mustard
      1/4  cup           minced parsley
    2      teaspoons     Old Bay Seafood Seasoning
    4      slices        white bread -- crusts removed
                         --barely moistened with water
    1      pound         lump crab meat
                         butter -- for frying
 
 Beat eggs with mayonnaise, mustard, parsley, seafood seasoning and bread.
 Stir in crab meat until evenly mixed.  Press into patties, and fry on both
 sides in medium-hot buttered skillet until browned on both sides.
 
 Makes 4 to 6 servings.
