                           Herb Marinated Shrimp

   Amount  Measure       Ingredient -- Preparation Method

      1/3  cup           fresh basil leaf
      1/4  cup           fresh mint leaves
    2      tablespoons   fresh oregano
      1/2  teaspoon      salt
      1/4  teaspoon      pepper
    3      cloves        garlic -- halved
    2 1/2  teaspoons     extra virgin olive oil
    1 1/2  pounds        large shrimp -- peeled
                         cooking spray
 
 Combine first six ingredients in food processor.  Pulse until mixture is
 coarsely chopped.  Add olive oil and process until well blended.
 Combine herb mixture and shrimp in a large bowl and toss to coat.
 Cover and marinate shrimp in fridge for 30 minutes.
 Remove shrimp from bowl.  Thread onto 12 six inch skewers.
 Prepare grill.  Place skewers on grill rack coated with cooking spray. 
 Grill three minutes on each side or until done.
