                        Bahamian macaroni and Cheese

    8      oz            elbow macaroni -- cooked and drained
    1      tbsp          onion -- finely chopped
    1      tbsp          green pepper -- finely chopped
    1      tbsp          celery -- finely chopped
    6      oz            Cheddar cheese -- Grated
           dash          pepper
    1      can           evaporated milk (12oz)
 
 Add the onion, green pepper and celery to the macaroni; stir.  Add one-half
 of the cheese and stir over low heat until melted.  season and stir in
 evaporated milk.  Spoon into a well-greased 8x8x2 baking pan and sprinkle
 remaining cheese evenly on top.  Bake in a pre-heated ove at 350 F for 20
 minutes.  Let stand for 10 min and cut into squares to serve.  Yeild:4-6
 servings.
