                          Baked Macaroni & Cheese

    2      cups          elbow macaroni
                         non stick cooking spray
   16      ounces        low fat 1% cottage cheese
    2      tablespoons   flour
    2      cups          skim milk
    4      ounces        sharp cheddar cheese -- grated
    1      teaspoon      salt
      1/4  teaspoon      ground black pepper
      1/4  teaspoon      ground nutmeg
      1/4  cup           fresh parmesan cheese -- grated
 
 1. Prepare macaroni according to pacakge directions; drain.
 2. Preheat oven to 375 degrees, spray shallow broiler safe 2 1/2 quart casserol
 e with non stick cooking spray.
 3. Meanwhile, if food processor with knife blade attached, blend cottage cheese
  until smooth.
 4. In a 2 quart saucepan, mix flour with 1/4 cup milk until smooth. slowly stir
  in remaining milk until blended. Cook over medium heat, stirring frequently un
 til mixture just boils and thickens slightly.
 5. Remove from heat, stir in cottage cheese, cheddar cheese, salt, pepper, and 
 nutmeg.
 6. Place macaroni in casserole; cover with cheese sauce. Bake uncovered for 20 
 minutes. Remove casserole from oven.
 7. Turn oven control to broil, sprinkle with parmesan cheese and serve.
