                             Three-Pepper Pizza

                         Ingredients:
    1      each          pizza crust 10 ready made -- partially cooked
    1 1/2  cups          mozzarella cheese -- shredded
      1/2  teaspoon      Italian seasoning -- dried
    1      medium        green pepper -- chopped
    1      medium        red pepper -- chopped
    1      medium        yellow pepper -- chopped
 
 Directions:
 Heat oven to 425 Deg. F.  Lightly grease 12 round pizza pan.  Top crust 
 with 1/2 cup of the cheese; sprinkle with Italian seasoning.  Arrange 
 peppers evenly over top.  Sprinkle with remaining 1 cup of cheese.
 Bake at 425 Degrees for 8 - 10 minutes or until crust is a deep golden 
 brown and cheese is melted.

 Healthy Hint:
 Green, red, and yellow bell peppers are good sources of beta carotene
 and 
 vitamin A.  The amount increases as green peppers ripen into sweeter red 
 peppers.  Bell peppers are also excellent source of vitamin C.
 
 For non Diabetics, this is a excellent late night snack.
