                        “Molletes” or Mexican Pizza

   12      ounces        Cacique Brand Oaxaca cheese
    2      cups          refried beans
    4                    French rolls or “bolillos”
                         ***Salsa Fresca***
    8                    Roma tomatoes -- diced
    1                    yellow onion -- diced
    1 1/2  cups          cilantro -- chopped
    1                    serrano pepper -- diced
    2      tablespoons   garlic -- minced
    1      teaspoon      oregano
      1/4  cup           lime juice
    5      tablespoons   olive oil
                         salt and pepper -- to taste
 
 Cut the bread in half, lightly butter, and toast in the oven. Spread the open f
 ace with the refried beans and layer top with the Oaxaca cheese. Return to the 
 oven just until the cheese begins to brown. Top with Salsa Fresca.
 
 Salsa Fresca or “Pico de Gallo” :
 Mix all ingredients. Let stand for a few minutes for flavors to blend.
