Lentil & Bulgur Patty Sandwiches    No. 307            Yields 6 Servings
 
  1 1/2 cups      lentils                  1/2 tsp       salt
      1 cup       onion, chopped             1 tsp       paprika (hot or sweet)
      2 large     garlic cloves, crushed   1/4 tsp       black pepper, freshly
      4 cups      water                                  ground
      1 cup       bulgur (cracked wheat)     1 cup       scallions, finely
      1 cups      parsley, fresh, minced                 chopped with tops
    1/4 Cup       parsley, minced            6           pitas
      2 tbls      oil
 
 Combine the lentils, onion, garlic and water in a medium saucepan.
 Bring to a boil.
 Reduce the heat.
 Cover.
 Cook for 20 to 25 minutes or until very tender.
 Add the bulgur, the second measure of parsley, the oil, salt, paprika and
 pepper.
 Stir to combine.
 Cover.
 Cook low heat for 2 minutes.
 Let cool to lukewarm in the covered pan.
 When lukewarm, shape into patties.
 Combine the second measure of parsley and the scallions on a dish.
 Press both sides of the patties into it.
 Serve the patties in the pitas (cooled or chilled).
