                      How to Roast Red Peppers/Chilies

 Directions:
 To roast chilies or bell peppers, set oven control to broil.  Place 
 chilies or bell peppers on rack of broiler pan with tops about 5 inches 
 from heat.  Broil, turning occasionally, until skin is blistered and 
 evenly browned (not burned).  Remove to a brown bag, and close tightly.  
 Let stand 20 minutes.  Peel peppers, discarding skin.
