                            Sleep-In Pancake Mix

   Amount  Measure       Ingredient -- Preparation Method

    8      cups          flour
      1/2  cup           sugar
    3      tablespoons   baking powder
    1      tablespoon    baking soda
    2      teaspoons     salt
    2      teaspoons     ground cinnamon
    1      teaspoon      ground nutmeg
      1/2  teaspoon      ground cloves
 
 Combine all ingredients in a large bowl. Store in plastic bags or a
 covered container.
 Makes 8 batches of pancakes, about 80 pancakes.
 Buckwheat Pancakes: Decrease flour by 1/2 cup and add 1/2 cup buckwheat
 flour. Eliminate spices, if desired.
 Cornmeal Pancakes: Decrease flour by 1/2 cup and add 1/2 cup cornmeal.
 Eliminate spices.

 This is the recipe for using pancake mix. I did not have good results in
 the oven but they are fantastic on the griddle. I have  added pecans and
 they turn out very good.
