                               Roasted Garlic

    9      bulbs         fresh garlic
    4      cups          kosher salt
 
 Preheat oven to 350 degrees.  Place 1/8 inch of the salt in the bottom of an 8x
 8x2-inch baking dish.  Put the garlic bulbs on top of the salt.  then fill the 
 dish with salt until only the tips of the bulbs are showing.
 
 Heat the dish in the oven for 45 minutes to 1 hour.  When the garlic is done, t
 he tips will ooze a little oil.  Remove the dish from the oven and let it cool 
 for about 15 minutes.  Remove the bulbs from the salt, cut them in half horizon
 tally, and squeeze the paste from the lcoves.

 NOTES : Save the skins and use them to flavor vegetable stock.  Use the salt as
  garlic salt, or reuse 2-3 times to roast more garlic.  (Eventually the garlic 
 oils in the salt burn and spoil the salt’s flavor.)
