                              SPLIT PEA HUMMUS

    1       c            Dried green split peas
      1/2   c            Tahini
    1       tb           Olive oil
      1/3   c            Lemon juice
    2                    Garlic cloves -- minced
    1 1/2   ts           Dried mint
    4       tb            -- water
 
    Cook the split peas in 3 cups of water for 45 to 60
   minutes on the stovetop, or 8 to 12 minutes in a
   pressure cooker.
   
    Place all ingredietns in a food processor and blend
   until smooth and creamy, adding enough water to
   achieve desired consistency. Yields: 2 1/2 cups.
   
    Serve at room temperature.
   
    Per tablespoon: 27 cal; 1 g prot; 1 mg sod; 2 g carb;
   2 g fat; 0 mg chol; 3 mg calcium
