      title: cucumber pepper chutney

       2 lb english cucumber
       2 t  kosher salt
       1 c  red bell pepper
       1 t  garlic
     1/2 t  crushed red chiles
       2 t  fresh lime juice
     1/3 c  olive oil
     1/2 t  apple cider vinegar
            kosher salt
     1/4 c  fresh dill weed
 halve and seed cucumbers, chop fine 
 sprinkle with kosher salt 
 allow to drain in a collander for 30-45 minutes 
 rinse with cold water and drain well
 combine cucumbers, bell peppers, shallots, garlic, red pepper flakes,
 lime juice, and olive oil in a large bowl-mix well
 add vinegar, sugar, and salt to taste 
 let stand for 60 minutes 
 stir in minced dill
 serve at room temperature
