      title: onion marmalade
   servings: 1
       5 c  sweet onion
       1 t  olive oil
       1 t  sugar
       1 t  salt
     1/2 t  pepper
       3 t  vinegar
 combine oil, sugar, salt, and pepper in a saucepan, over a low flame
 heat and stir to dissolve sugar
 add onions and stir to coat well
 cover and simmer for 30 minutes, stirring often
 stir in vinegar
 cover and simmer for 30-45 minutes, until thickened
