                        Aunt Hannah’s Apple Pudding

    8      med           cortland or empire apples -- cored and sliced
      1/4  cup           butter
    1      cup           sugar
    6      lg            eggs -- beaten
    1      pt            sour cream
           dash          nutmeg
    2      cups          graham cracker crumbs
 
 Combine apples,butter, and 1/2 cup sugar in saucepan.  Cook over low heat until
  apples are soft.  In a double boiler or heavy saucepan, cook sour cream, eggs,
  and other 1/2 cup of sugar.  Stir constantly until thickened.  Remove from hea
 t and stir in vanilla and nutmeg.  Carefully stir in apples.  Butter and 8-inch
  pan.  Reserve 1/3 cup graham cracker crumbs.  Sprinkle remaining crumbs in bot
 tom of pan.  Press down.  Spoon the apple mixture onto the crumbs.  Sprinkle re
 maining crumbs in bottom of pan.  Press down.  Spoon the apple mixture onto the
  crumbs, and spinkle the top with reserved crumbs.  Bake at 375 degrees for one
