                        Baked Yellow Squash Pudding

    4      pounds        yellow squash -- scrubbed, sliced
    3      medium        yellow onions -- peeled, wedged
      1/4  cup           boiling water
      1/4  cup           butter or margarine
      1/4  teaspoon      thyme
      1/8  teaspoon      rosemary
      1/8  teaspoon      nutmeg
    1      teaspoon      salt
      1/8  teaspoon      pepper
    1      tablespoon    brown sugar
      1/4  cup           parsley -- minced
 
 Preheat oven to 350°.  Place squash, onions, water and butter in a large
 kettle, cover, adn simmer 25 - 30 minutes until squash is mushy. 
 Uncover adn simmer 10 minutes longer, mashing large pieces with a fork. 
 Stir in all remaining ingredients.  Transfer to a buttered 3 quart au
 gratin dish and bake, uncoverd, 2- 1/2 hours until light caramel in
