                           Stilton Bread Pudding

    6      cups          stale crusty white bread -- cut in 1/2 cubes
      1/2  pound         Stilton cheese (~2 cups) -- crumbled
    2 1/2  cups          milk
      1/2  cup           port
    3      large         eggs -- lightly beaten
    1      tablespoon    Dijon-style mustard
    1 1/2  teaspoons     salt
                         freshly ground black pepper
 
 Butter a 2-qt. souffle dish.  Place a layer of bread crumbs on the bottom of
 the dish and cover with some crumbled Stilton.  Continue layering until all
 of the bread crumbs and cheese have been used.  In a large pitcher, mix
 together the remaining ingredients and pour over the bread and cheese.
 Cover the dish and chill the pudding eight hours or overnight in the
 refrigerator.
 
 The next day, place the dish in the oven and turn on to 350F.  Bake the
 pudding, uncovered, for 65 - 75 minutes, until firm and brown.  Serve hot.
