                     Blueberry Bread and Butter Pudding

    4      c             fresh blueberries -- washed and stemmed
    2      tbsps         lemon juice
    1      c             sugar
    1      tbsp          water
           dash          salt
    8      slices        dry bread -- day old
      1/4  c             butter -- softened
 
 In a heavy-bottomed saucepan combine blueberries, lemon juice, sugar,
 water and salt.  Cook over medium heat, stirring frequently about 20 min.
 or until berries are stewed.  Set aside.  Cut off crusts from bread
 slices and butter each slice lavishly.  Butter a 2 qt deep baking dish.
 Layer buttered bread slices and stewed berries and sauce in dish.  Bake
 in a 350 degree F oven 15-20 minutes.  Serve warm with ice cream or
 whipped cream.
