                              Mango Pudding LF

    1                    mango -- pulp only
                         (about 2/3 cup)
    6      tablespoons   fresh orange juice -- (from one)
    2      tablespoons   fresh lime juice -- (from one)
    5      ounces        Tofu Mori-nu soft
    3      tablespoons   light brown sugar
 
 Toss in a blender and puree.  Pour into serving bowl and chill one hour.

 pudding (with tofu) that was just posted to the list - it
 was terrific!  I used brown sugar instead of white, otherwise, pretty much
 according to recipe.  It was a little loose but within 'pudding
 parameters'.  Served it to guests too, they were a little surprised it was
 tofu.  I'm glad it’s mango season in Houston.”

 I hope it’s low fat enough.  I don't have any of the software products, 
 but I figured since the tofu is the low fat variety it almost surely is.  
 If anyone could calcuate the nutrition info, I'd love to see it.  Thanks.
