                            Baked Peach Pudding

    8      ripe          peaches,blanched,peeled,halved,pitted
    2      cups          water
      1/2  cup           sugar
      1/2  cup           flour
    1      quart         milk
    6      large         eggs separated,whites stiffly beaten
 
    Stew peaches gently in water, sweetened with sugar to taste, until they are 
 tender-
  about 10 minutes.
   Stir the flour to a paste with 1/2 cup of the milk and beat in the egg yolks.
  Bring the
 remaining milk to a boiland gradually stir in the egg yolk mixture.. Keep stirr
 ing until
  batter thickens, then add the stiffly beaten egg whites,beating them in quickl
 y.
   While peaches are still hot place them in a baking dish and pour the batter o
 ver them.
    Bake in a preheated 400*F. oven for 30 minutes or until peudding is set and 
 browned.
   Serve warm,,   Makes 4 servings.
