                                Rice Pudding

    1      C             Boiling Water
      1/2  C             Rice -- * see note
      1/2  Tsp           Salt
    1      Qt            Skim Milk
    2      Tbsp          Butter
    2                    Eggs -- beaten
      1/2  C             Sugar
      1/2  C             Raisins
      1/2  tsp           Vanilla
    1                    Cinnamon Stick -- optional
 
 Boil water, rice & salt for 7 min.  Add milk, butter and cinnamon stick and cook
on low heat for 1 1/4 hours.   Remove from heat, add eggs, sugar, raisins &
vanilla.  Cook a minute and take off stove and cool.  Pudding will thicken as it
cools.
