                             Red Pepper Relish

   15                    sweet red peppers -- halved, seeded
    4      medium        onions -- halved
    3      cups          sugar
    3      cups          vinegar
    2      tablespoons   pickling salt
 
 Thinly slice peppers and onions; set aside.  In a 6 quart kettle combine
 sugar, vinegar and salt; bring to boil.  Add vegetables adn bring to
 boil again; simmer for 15 mintues.  Pour into hot sterilized jars,
 leaving 1/2 inch headspace.  Wipe rims with a damp cloth and adjust
 lids.  Process in a boiling water bath for 15 minutes.  Makes 7 1/2

 NOTES : This is a very colorful relish and is great for using as a
 decorative addition to winter recipes.  Also good as a relish with meats
 and poultry dishes, or served on crackers spread with cream cheese.
