                              Zucchini Relish

   10      Cups          Zucchini Chopped Fine Or Ground Course
    5      Medium        Onions Chopped Fine Or Ground Course
    1      Cup           Green Peppers Chopped Fine Or Ground Cours
    1      Cup           Red Peppers Chopped Fine Or Ground Course
    2      Large         Ripe Tomatoes Chopped Fine Or Ground Cours
    3      Large         Stalks  Celery Chopped Fine Or Ground Cour -- 2 Cups
      1/2  Cup           salt
    2 1/2  Teaspoons     celery seed
    2 1/2  Teaspoons     black pepper
    1      Tablespoon    cornstarch
    1 1/2  Teaspoons     dry mustard
    1      Teaspoon      turmeric
    1      Teaspoon      nutmeg
    5      Cups          sugar
    2 1/2  Cups          white vinegar
 
 Chop the first 6 ingredients. Mix the first 6 ingredients (remove seeds if you 
 like) and add 1/2 cup salt; cover. Let stand overnight. Drain and rinse with co
 ld water; drain again. Add other ingredients and mix well. Cook 45 minutes, sim
 mering and stirring. Ladel into hot jars. Seal and process in boiling water bat
 h 10 minutes. Makes 5 to 6 pints.
