                              ZUCCHINI RELISH

   Amount  Measure       Ingredient -- Preparation Method

   10      C             squash
    4      C             onions
    5      T.            salt
                         **Grind these 3
                         ingredients using fine grinding blade (or
                         use a
                         blender).  Let stand overnite.
                         Next a.m. drain and rinse.**
                         Add:
    2 1/2  C.            vinegar
    4      C.            sugar -- (4 to 6)
    1      T.            dry
                         mustard
    1      T.            cornstarch
    1      T.            turmeric
    2      T.            celery seed.
                         Grind and add:
    1                    Green pepper
    1                    Red pepper
      1/2  T.            pepper
 
 Cook 30 min.  Stir often.  Seal in pint jars.
