    2 1/2  c             Fresh or canned pineapple, in juice -- chopped
      1/2  c             chopped red bell pepper
      1/2  c             fresh mint leaves -- chopped
    2      tbsp          fresh lemon juice
    1      tbsp          sugar
           pinch         ground red pepper
 
 Mix ingredients together.  May be stored in refrigerator up to 2 days.
