    2      cups          red onion -- finely chopped
    1                    tomato -- chopped fine
      1/4  cup           green onions -- chopped
      1/4  cup           lemon juice
    2      tablespoons   cilantro leaves -- chopped
    2      tablespoons   wine vinegar
    1      teaspoon      soy sauce, low sodium
    3                    garlic cloves -- chopped
      1/4  teaspoon      cayenne pepper
 
    Mix all ingredients in a glass bowl, cover, and refrigerate at 
 least 2 hours.
