       6 c  tomato concasse
       2 c  onion
     1/2 c  light brown sugar
       1 t  kosher salt
       1 c  malt vinegar
       1 t  red hot chile
 
 combine ingredients in a saucepan, over a medium flame
 bring to a boil, reduce heat, and simmer until mixture has reduced by
 half, stirring often 
 remove from heat and allow to cool 
 cover and chill 
 serve at room temperature
