       5 c  tomato concasse
       1 c  onion
     1/2 c  white vinegar
       1 t  honey
       1 t  kosher salt
       1 t  mustard seed
       1 t  crushed red chiles
     1/2 t  garlic
     1/2 t  ginger
     1/4 t  ground coriander
     1/4 t  freshly ground nutmeg
       2    clove
 
 combine ingredients in a saucepan, over a moderate flame heat to a boil,
 reduce heat, and simmer for 2 hours, until thickened, stirring often 
 pour into a sterile jar 
 process for 10 minutes
 store in a cool, dark place
