    3      c             Vidalia onion -- thinly sliced
    2      c             tomatoes -- peel, core, chop
    4      cloves        garlic -- finely chopped
    2                    red jalapeno chiles -- finely chopped
    1      tsp           fresh oregano -- finely chopped
    2      tbsp          olive oil
                         salt
 
 Saute onions 'til soft and transparent.  Add everything else and heat to
 very hot ad well blended.  Put into hot half-pint jars and process at 10
 pounds for 25 minutes.  Pressure canning is a must.
 
 Makes 6 half-pints.
