                            Garlic and Oil Sauce

      1/4  cup           best-quality Olive oil
   15      large         garlic cloves -- chopped
      1/4  teaspoon      hot red pepper flakes
      1/2  cup           finely chopped fresh parsley
                         salt
    1      teaspoon      pepper, fresh ground
      1/4  cup           parmesan cheese -- grated
 
 heat oil in a medium skillet.  Add garlic, red pepper flakes, and parsley and c
 ook
 until garlic is tender, about 4 minutes.  Stir in salt and pepper and toss with
 hot pasta in a serving bowl.  Sprinkle parmesan cheese over pasta and toss agai
 n.
 Pass extra grated cheese and the pepper mill for each person to add to taste.
 Serves 4 (side dish)

 NOTES : I made this, and did not have fresh parsley or fresh garlic.  I
 substituted dried parsley but used only two tablespoons and used the minced gar
 lic
 equivalent of 15 cloves.  It was great with a bit of bite.
