                          Homemade Enchilada Sauce

   Amount  Measure       Ingredient -- Preparation Method

    1      tbsp          flour
    1 1/2  tbsps         olive oil -- or lard
      1/2  tsp           thyme
      1/2  tsp           oregano
      1/2  tsp           cayenne -- or to taste
    1      tsp           cumin
    1      clove         garlic -- minced
    1 1/2  c             chicken broth
      1/2  c             tomato puree -- to 1 cup
    1      tbsp          lime juice
 
 In a large heavy skillet saute the flour and oil over medium heat for 1 
 minute.  Add herbs and spices and garlic.  Cook 1 more minute, and then 
 add broth, tomatoe puree and lime juice.  Raise heat to high and boil, 
 stirring constantly until thickened.
