                              HONEY PLUM SAUCE

    2      cups          plums pitted -- chopped
      1/2  cup           honey
      1/4  cup           lemon juice
    2      tablespoons   onion -- minced
    1      teaspoon      gated lemon zest
      1/2  teaspoon      fresh ginger root
      1/4  teaspoon      salt
      1/4  teaspoon      ground cloves
      1/4  teaspoon      allspice
                         salt and pepper -- to taste
 
 Combine all ingredients in a medium saucepan, bring to boil, reduce heat and
 simmer for 15 minutes or until plums are completely cooked.  Puree mixture in
 a blender or food processor.  Taste and adjust sweetness, adding more honey
 if necessary.  Return to saucepan and simmer for 5 minutes.
