                               Cilantro Sauce

   6             cloves  garlic
   1                     serrano chile
                         OR jalapeno chile
   2               cups  cilantro -- (about 2 bunches)
   1           teaspoon  kosher salt
      1/4           cup  fresh lime juice
                         (3 to 4 limes)
      1/3           cup  extra virgin olive oil
 
 Combine the garlic, chile, cilantro, salt, and lime juice in a blender or
 food processor.  Blend or process until the mixture forms a smooth puree.
 Transer to a small bowl, stir in the olive oil, taste, and adjust the
 seasonings.
