                             Dry Jerk Seasoning

   Amount  Measure       Ingredient -- Preparation Method

    1       tb           Onion flakes
    1       tb           Onion powder
    2       ts           Ground thyme
    2       ts           Salt
    1       t            Ground Jamaican allspice
      1/4   ts           Ground nutmeg
      1/4   ts           Ground cinnamon
    2       ts           Sugar
    1       t            Coarse ground black pepper
    1       t            Cayenne pepper
    2       ts           Dried chives or green onions
 
   Mix together all the ingredients. Store leftovers in a tightly closed
 glass
   jar. It will keep its pungency for over a month.
   
   I use this spice combination constantly, and have found it enhances
 the
   flavor of salad or slaw dressings, as well as meat, fish, fowl, and
 just
   about anything else I eat.
