Garam-Masala
 
  24 large cardamoms
 2 ounces coriander seeds
 2 ounces black peppercorns
 1/2 ounce caraway seeds
 1/2 ounce whole cloves
 1/2 ounce ground cinnamon
 
 Remove skin from the cardamoms.  Add to the coriander seeds, peppercorns,
 caraway seeds and cloves.  Place in a coffee grinder and grind until fine
 but not powdery.  Add ground cinnamon and mix in thoroughly.  Store in
 airtight jar until needed.
