    1      pound         Italian sausage -- ground
    2      cups          shallot -- minced
    2      tablespoons   garlic -- minced
    4      cups          low sodium beef broth
    1      teaspoon      saffron threads
    3      tablespoons   olive oil
   12      ounces        diced green chiles
    1      teaspoon      oregano
    1      teaspoon      cumin
      1/2  teaspoon      cayenne
    2      tablespoons   hot chile powder
    6      ounces        tomato paste
   32      ounces        canned kidney beans -- drained
    4      cups          onion -- minced
 
 COMBINE BEEF, SAUSAGE, AND GARLIC IN A LARGE STOCKPOT 
 SAUTE FOR 10-15 MINUTES, UNTIL BROWNED 
 ADD REMAINING INGREDIENTS, EXCEPT BEANS 
 SIMMER FOR 60 MINUTES 
 ADD KIDNEY BEANS AND SIMMER FOR ANOTHER 30-60 MINUTES 
 SERVE HOT, GARNISHED AS DESIRED
