                                White Chili

   Amount  Measure       Ingredient -- Preparation Method

    1      pound         chicken breasts (skinned &boned) -- diced
      1/2  cup           shallot -- chopped
    3                    garlic cloves -- minced
    1      can           tomatillos (18 ounce) -- drain, chop
    1      can           tomatoes (14 oz) -- undrained chop
    1      can           chicken broth (13 oz)
    1      can           chili peppers, undrained (4 oz) -- chopped
      1/2  teaspoon      oregano
    1      teaspoon      coriander seed -- crushed
      1/2  teaspoon      cumin
    2      cans          cannellini beans ( 15 oz) -- drained
    3      Tablespoons   lime juice
      1/2  teaspoon      pepper
      1/4  cup           Cheddar cheese -- grated
 
 Spray a large saucepan with cooking spray.  Add 1 Tablespoon olive oil and
 add chicken breasts and saute 3 minutes or until done.  Remove chicken
 from pan and set aside.
  Add shallots and garlic and saute until tender.
 Add all ingredients  UP TO, NOT INCLUDING BEANS.  bring to boil and simmer
 20 minutes.
 Add beans along with chicken and cook 5 minutes or until heated.
 Stir in lime juice,pepper just before serving.
 Ladle into bowls and top with cheese.
