                            Lentil Kielbasa Stew

    2      slices        bacon
    3      medium        onions -- chopped
    1 1/2  quarts        beef stock or bouillon
    2      cups          dried lentils -- rinsed
    1      cup           chopped carrots
    1                    bay leaf
    1      pinch         dried thyme
    2      pounds        kielbasa -- sliced thin
                         salt and freshly ground pepper
 
      In a medium skillet, fry bacon and onions over medium heat. Drain off
 and discard drippings. Remove bacon and crumble. In a large stockpot, place
 the bacon, onions, beef stock, lentils, carrots, bay leaf, thyme, and 1-1/2
 pounds kielbasa. Bring to a boil and simmer for about 1 hour. Add remaining
 kielbasa and cook 10 minutes more. Season with salt and pepper to taste.
