                             Vegetable Patties

   Amount  Measure       Ingredient -- Preparation Method
 --------  ------------  --------------------------------
    1      cup           finely chopped green bell pepper -- cooked
    1      cup           grated carrots -- tightly packed
    1      cup           chopped fresh spinach -- tightly packed
    2      medium        potatoes -- boiled and mashed
    1      tablespoon    grated onion
    1      tablespoon    minced parsley
    1      teaspoon      salt
           dash          pepper
    1      cup           matzo meal
                         Vegetable shortening -- for frying
 
 Combine all vegetables in a mixing bowl.
 
 Add eggs, one at a time, mixing well after each addition. 
 
 Season to taste with salt and pepper.
 
 Stir in matzo meal and let stand 30 minutes in the refrigerator.
 
 Form into patties 3 -1/2 inches in diameter.
 
 Pan fry, browning on both sides.*  Drain on paper towels. Serve hot.

 NOTES : *This would be a great low fat dish if you use a non stick pan 
        with a teaspoon or two of oil.
