       Title: Stately Coconut Layer Cake

       1 c  Shortening
       2 c  Sugar
       4    Eggs
       3 c  Sifted cake flour
   2 1/2 ts Baking powder
     1/2 ts Salt
       1 c  Milk
       1 ts Almond extract
       1 ts Vanilla extract
            Lemon-orange filling

            Pineapple filling; see
            Boiled frosting; see recipe
       1 sm Fresh coconut, or; grated
     1/2 c  Flaked coconut

   Preparation Time: 0:15
   Cream shortening; gradually add sugar, beating well at
   medium speed of an electric mixer.  Add eggs, one at a
   time, beating well after each addition. Combine flour,
   baking powder, and salt; add to creamed mixture alternately
   with milk, beginning and ending with flour mixture.  Mix
   after each addition.  Stir in flavorings. Pour batter into
   3 greased and floured 9-inch round cakepans.  Bake at 375
   degrees for 20 to 25 minutes or until a wooden pick
   inserted in center comes out clean.  Cool in pans 10
   minutes; remove from pans, and let cool completely on wire
   racks. Spread Lemon-Orange Filling or Pineapple Filling
   between layers; spread Boiled Frosting on top and sides,
   and sprinkle with coconut.  Yield:  one 3-layer cake.
