Apple-Pecan Pound Cake

Amount Measure Ingredient -- Preparation Method

2 cups sugar
1 1/2 cups vegetable oil
3 large eggs
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons vanilla
3 cups Granny Smith apple -- peeled/finely diced*
3/4 cup flaked coconut
1 cup pecans -- chopped
*Any tart cooking apples may be used.
Mix sugar and oil, add eggs and beat well. Combine flour, soda and salt.
Add flour mixture to beaten egg
mixture. Stir in vanilla, apples, coconut, and pecans. Mix well. Spoon
butter into a greased tube pan.
Bake at 325~ for 1 hour and 20 minutes. Allow cake to cool to room
temperature before removing from pan.

NOTES : Bobbie’s Notes: This was absolutely decadent. I made it in one
large loaf pan and one mini loaf pan. I froze the smaller one.
