       Title: Coconut Granola Bars

   2 1/4 c  Quick-cooking oats; uncooked
       1 c  Flaked coconut
     1/4 c  Wheat germ
     1/4 c  Plus 2 tb butter or margarin
     1/4 c  Brown sugar; firmly packed
     1/2 c  Honey
     1/2 c  Peanut butter
   1 1/2 ts Vanilla extract
     1/2 c  Unsalted peanuts; chopped
     1/2 c  Raisins

   Combine oats, coconut, and wheat germ in a greased 9-inch
   square pan.  Bake at 325 degrees for 25 minutes, stirring
   occasionally.  Set aside. Combine butter, sugar, and honey
   in a medium saucepan; cook over medium heat, stirring
   occasionally, until butter melts and sugar dissolves.
   Remove from heat, and add peanut butter and vanilla,
   stirring until peanut butter melts.  Pour over oat mixture.
   Add peanuts and raisins, and stir well.  (Mixture will seem
   dry at first; continue stirring until moist.) Press mixture
   firmly into pan with greased fingertips.  Bake at 350
   degrees for 12 minutes.  Cool on a wire rack.  Cut into
   bars.  Yield:  2 dozen.
